Ingredients
- 1 lb shrimp, peeled and deveined
- 1 can (14.5 oz) diced tomatoes
- 1 can (14 oz) coconut milk
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 Tbsp ginger, minced
- 1-2 Tbsp curry powder (adjust to taste)
- 1 tsp turmeric powder
- 3/4 tsp cumin
- 1 Tbsp coconut oil
- Salt, to taste
- Fresh cilantro, chopped (for garnish)

Instructions
- Peel and devein the shrimp if not done already. Chop the onion, garlic, and ginger.
- In a large pan, heat the coconut oil over medium heat. Add the chopped onion and sauté until it becomes translucent.
- Add the minced garlic and ginger to the pan. Sauté for another minute until fragrant.
