Easy One-Pot Shrimp Coconut Curry - Orthodox Fasting Meal
This tasty Shrimp dish is a perfect option for fasting Orthodox Christians. It's not spicy either so it works great as a family dinner entree!

- 1 lb shrimp, peeled and deveined
- 1 can (14.5 oz) diced tomatoes
- 1 can (14 oz) coconut milk
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 Tbsp ginger, minced
- 1-2 Tbsp curry powder (adjust to taste)
- 1 tsp turmeric powder
- 3/4 tsp cumin
- 1 Tbsp coconut oil
- Salt, to taste
- Fresh cilantro, chopped (for garnish)
- cooked rice of your choice
Peel and devein the shrimp if not done already. Chop the onion, garlic, and ginger.
In a large pan, heat the coconut oil over medium heat. Add the chopped onion and sauté until it becomes translucent.
Add the minced garlic and ginger to the pan. Sauté for another minute until fragrant.
Add the cumin, curry powder, and turmeric powder to the pan. Stir well to coat the onions, garlic, and ginger with the spices.
Add the diced tomatoes and coconut milk to the pan. Stir well to combine. Bring the mixture to a simmer.
Add the shrimp to the pan. Cook for about 5-7 minutes, or until the shrimp are cooked through and opaque.
Add salt to taste. Adjust the seasoning as needed.
Garnish with fresh cilantro. Serve hot over cooked rice.
