Easy One-Pot Shrimp Coconut Curry - Orthodox Fasting Meal

This tasty Shrimp dish is a perfect option for fasting Orthodox Christians. It's not spicy either so it works great as a family dinner entree!

Ingredients
  

  • 1 lb shrimp, peeled and deveined
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (14 oz) coconut milk
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 Tbsp  ginger, minced
  • 1-2 Tbsp curry powder (adjust to taste)
  • 1 tsp turmeric powder
  • 3/4 tsp cumin
  • 1 Tbsp coconut oil
  • Salt, to taste
  • Fresh cilantro, chopped (for garnish)
  • cooked rice of your choice

Instructions
 

  • Peel and devein the shrimp if not done already. Chop the onion, garlic, and ginger.
  • In a large pan, heat the coconut oil over medium heat. Add the chopped onion and sauté until it becomes translucent.
  • Add the minced garlic and ginger to the pan. Sauté for another minute until fragrant.
  • Add the cumin, curry powder, and turmeric powder to the pan. Stir well to coat the onions, garlic, and ginger with the spices.
  • Add the diced tomatoes and coconut milk to the pan. Stir well to combine. Bring the mixture to a simmer.
  • Add the shrimp to the pan. Cook for about 5-7 minutes, or until the shrimp are cooked through and opaque.
  • Add salt to taste. Adjust the seasoning as needed.
  • Garnish with fresh cilantro. Serve hot over cooked rice.
